There’s no such thing as too many pasta salad recipes, especially during the summer when you need something quick, fresh and delicious to serve up with grilled meats.

Ingredients:

1 pound whole wheat rotini

1 bunch kale, stems removed and chopped

2 boneless, skinless chicken breasts

4 tablespoons extra-virgin olive oil, divided

Kosher salt and freshly ground black pepper, to taste

2 lemons

1/2 cup grated Parmesan cheese, plus extra for serving
Method:

Bring at least 6 quarts of water to a rolling boil. Salt the water liberally and cook rotini, stirring occasionally according to package directions. During the last 2 minutes of cooking, add chopped kale and stir to combine. When rotini is al dente, drain completely and set aside.

Heat 1 tablespoon olive oil in a large skillet set over medium-high heat. Season the chicken with kosher salt and black pepper on both sides and sauté on both sides until internal temperature reaches 165°F, about 8 to 10 minutes per side. Set aside.

While chicken cooks, zest and juice both lemons into a large bowl. Slowly whisk in remaining olive oil. Whisk in grated cheese, then season with salt and pepper to taste.

To assemble, dice chicken into bite-size pieces and transfer to bowl with reserved dressing. Add pasta and kale and toss to coat thoroughly. Garnish with more grated Parmesan cheese and serve.
