Ingredients
For Cilantro Lime Dressing
- 1 cup chopped cilantro
- 1 garlic clove
- 1 tablespoon honey
- 1/4 cup fresh lime juice
- 1/2 cup extra virgin olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground pepper
For Sweet Potato Quinoa Burrito Bowls
- 2 sweet potatoes, peeled and cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- 3 cups cooked quinoa
- 1 (15-ounce) can black beans, rinsed and drained
- 1 cup cherry tomatoes, halved
- 1/2 small red onion, thinly sliced
- 1 ripe large Hass avocado, diced
- 1/4 cup cilantro, chopped
Method
For Cilantro Lime Dressing- Add cilantro, garlic, honey, lime juice, olive oil, salt and pepper to a blender or food processor and blend until smooth.
For Sweet Potato Quinoa Burrito Bowls
- Preheat oven to 400°F.
- Place sweet potatoes on a rimmed baking sheet lined with parchment paper. Drizzle with olive oil, sprinkle with cumin, salt and pepper, and toss to combine evenly.
- Bake sweet potatoes for 20-25 minutes or until tender.
- Evenly divide quinoa among four bowls. Top with sweet potatoes, black beans, tomatoes, onion and avocado. Drizzle with cilantro lime dressing and sprinkle with cilantro.
